Clair’s Corner: Chicken Goodness, Wisdom, and a Dash of Detective Humor

Hello everyone!

Welcome to Clair’s Corner in Elemental Recovery! Obviously, my name is Clair. I am the lucky mama of the Tribe of 5. Five girls, 10 years from oldest to youngest. All five will join in with great info as time goes on.

I am 83 years old and don’t hike, don’t do yoga, and don’t participate in all their adventures except vicariously. But that’s fun too.

I have been a dental assistant, weekly newspaper editor and reporter, plus other odd jobs. But my favorite time was as a police officer and then detective in the County for well over 25 years. I sure learned a lot about the real world in those years.

But there is one thing I know about and that is cooking. My Grandmother was my coach and she had a magic touch with food. And that’s what Clair’s Corner is all about.

Of course, I may get off track from time to time, and tell a joke or a funny story that happened at work or home. So please be patient with me.

Today’s recipe is “Chicken Goodness”. I Love this recipe! It is easy, healthy and fun to make.

Ingredients:

  • 2 or 3 apples of your choice, chopped into bite-sized pieces

  • 1 cup of chopped walnuts

  • 2 cups of sliced grapes – red or green or both

  • 2 Cups of shredded chicken breast – roasted and finely shredded

  • Or 1 large can of cooked, shredded chicken

  • 2 Tablespoons of lemon juice

  • Mayonnaise to taste

Mix all ingredients thoroughly and serve with Garlic Butter Ritz Crackers – my personal favorites! Its easy and so so good!

I’ll see you again soon, with another recipe for a tasty concoction. In the meantime, do the things my girls suggest. They have lived and learned so much I never knew.
